Recipe Monday- Bruschetta Chicken


This Recipe has become a favorite of mine. It isn't very difficult to prepare but looks like you spent all day in the kitchen! It will be a great addition to your weekly menu with fresh tomatoes from the garden. 


  • Bruschetta Chicken
  • 1/2 cup all-purpose flour
  • 1 egg
  • 4 boneless skinless chicken breast
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup dry bread crumbs
  • 1 tablespoon butter, melted
  • 2 large tomatoes, seeded and chopped
  • 3 tablespoons minced fresh basil
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

  • 1. Place flour and eggs in separate shallow bowls. Dip chicken in flour; then in eggs and place in a 9-in x 13-in baking dish. Combine the bread crumbs with Parmesan cheese and melted butter. Sprinkle over the chicken.

  • 2. Cover the baking dish loosely with foil. Bake at 375 degrees for 20 minutes. Uncover, then bake 5-10 minutes longer (or until chicken is at 170 degrees)

  • 3. Combine the remaining ingredients in a small bowl. Spoon over the chicken. Return the chicken to the oven for 3-5 minutes longer, or until the tomato mixture is heated through.
