This Recipe has become a favorite of mine. It isn't very difficult to prepare but looks like you spent all day in the kitchen! It will be a great addition to your weekly menu with fresh tomatoes from the garden.
- Bruschetta Chicken
- 1/2 cup all-purpose flour
- 1 egg
- 4 boneless skinless chicken breast
- 1/4 cup grated Parmesan cheese
- 1/4 cup dry bread crumbs
- 1 tablespoon butter, melted
- 2 large tomatoes, seeded and chopped
- 3 tablespoons minced fresh basil
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1. Place flour and eggs in separate shallow bowls. Dip chicken in flour; then in eggs and place in a 9-in x 13-in baking dish. Combine the bread crumbs with Parmesan cheese and melted butter. Sprinkle over the chicken.
- 2. Cover the baking dish loosely with foil. Bake at 375 degrees for 20 minutes. Uncover, then bake 5-10 minutes longer (or until chicken is at 170 degrees)
- 3. Combine the remaining ingredients in a small bowl. Spoon over the chicken. Return the chicken to the oven for 3-5 minutes longer, or until the tomato mixture is heated through.
